昭和50年代から販売している「もつ煮込み」で、特別な名前で販売しようとしましたが、いい名前が浮かばず、当時の役員が「どれもこれもパンチのない名前だなぁ・・・」と言ったことがきっかけで「パンチ」という名前になりました。醤油とごま油がベースで、味はもつ煮込みにしてはやや甘口ですが、クセになる甘さで後味が少しピリ辛です。具材はたっぷりの国産の豚モツのほかにコンニャクとメンマが入っており、柔らかなモツの食感にコンニャクのプリプリ感やメンマのシャキシャキ感が相まって、味だけでなく食感も楽しめる一品です。 一般的な「かき揚げ丼」は、ごはんの上にサクサクのかき揚げが載ってタレが掛かっているイメージですが、山田うどん食堂の「かき揚げ丼」は、サクサクの大きなかき揚げ天ぷらを山田うどん特製の甘じょっぱいタレで煮込んでから玉子とじにしたものがごはんの上に載っているというものです。天ぷらなのにとろとろ食感が楽しめる、ほかにありそうでない、山田うどん食堂名物メニューで、特に、1人前のうどんまたはそばをつけた「かき揚げ丼セット」が大人気です。 レストランじゃなく、食堂です。飽きないおいしさ。飾らない居心地。いつも
