「水が集まるところ」に由来する山形県長井市。最上川・野川・白川が合流している水の豊かな地です。 長井の水は45ｍ以上の深井戸から取水する100％天然地下水。朝日山系の山々により自然ろ過された長井市の水は、上質な口当たりの良い軟水です。 マグネシウム・カルシウムの含有量が120mg以下の「超軟水」。日本の水道の平均硬度は約５０ｍｇ/ℓ、長井の水は半分以下の２０mg/ℓ。吸収がよく、体にも優しい水。その長井の水の良さを生かした酒造りをする為昔ながらの手仕事、手造りにこだわりを持ち、洗米は手洗いを徹底しています。 龍神になった卯の花姫が守る伝説の美味しい水に自信をもって、酒造りをおこなっています。 最上川舟運で栄えた長井市中心部の街並みに溶け込み、酒造りを担う酒蔵。長沼家は江戸時代から１２代続き、９代目までは呉服店や養蚕業を営んでいました。１０代目が、近辺に酒造会社がなかったことから酒造業を開始。１９１６年から、長く愛される酒造りを始めました。 レトロな雰囲気が漂う酒蔵では昔ながらの製造機が現役として稼働しています。米を蒸す「甑（こしき）」、「槽（ふね）」と呼ばれる圧搾機はその代表格です。甑
