菊見せんべい総本店は、明治八年（1875年）東京文京区は団子坂の麓に創業されました。看板商品のせんべいは、「天円地方」(天は円く、地は方形である）という概念から、地に住まう人々に愛されるようにと、創業当時より珍しい正方形の形が特徴です。日本人がこよなく愛する米菓を、厳選された材料と、伝統の技で一世紀を越えて作り続けております。米、そして醤油、という日本の貴重な食文化を守り後世に伝えるべく日々精進しております。 明治八年（１８７５年）初代天野六五郎は、この多くの見物客に何か手土産をと、その名も「菊見せんべい」として売り始めたのです。 円い形が普通であったせんべいの中で、正方形のせんべいは大変珍しく、評判の手土産となったそう。 当時、大量の米を買い付けていたことから、戦前まで米穀商も営んでおりました。 学問の盛んな地域でもあったことから、森鷗外氏や、高村光雲氏、高村光太郎氏など文化人にも親しまれました。 歯ごたえと香ばしさは、せんべいには欠かせない要素と考え、しっかりと密度のある生地を、下から上がる熱に対して反転を繰り返し、両面均等に焼く、この事によってムラのない歯ごたえを生み出しています
